It is with a heavy heart that we announce the closure of The Aimsir Distilling Company’s tasting room and restaurant. Over the past two years, we have faced both challenges and moments of growth. However, despite the hard work and dedication of our team, including Chef Cyrus Ichiza, recent circumstances have made it evident that we can no longer sustain a viable path forward.

In early 2023, Aimsir was on the brink of closure, but through collaboration with Chef Ichiza and the launch of the concept of Jade Rabbit, we found a renewed sense of purpose. Aimsir Distilling hired Chef Ichiza and embraced his vision to build something special. Over time, the restaurant grew in popularity, and we adapted to meet demand. From expanding prep areas to upgrading facilities, our team worked tirelessly to create a welcoming and innovative experience for our customers.

As we expanded, we encountered substantial operational and financial challenges. Despite implementing changes and relying on personal financial support from Aimsir Distilling’s owners, achieving long-term stability proved elusive.. Together with Chef Ichiza, Aimsir Distilling made meaningful progress toward establishing a workers’ collective—a vision centered on shared ownership and accountability—but were unable to fully realize it.

Recent disagreements and public discourse have further impacted Aimsir Distilling’s ability to continue as a unified team. While these experiences have been difficult, we take pride in the opportunity we provided to develop the Jade Rabbit concept, fostering growth and success for our staff and leadership.
As we close this chapter, we extend our heartfelt gratitude to our community—our dedicated team members, loyal patrons, and trusted purveyors—for making this journey so memorable. We wish Chef Cyrus Ichiza and all our employees success in their future endeavors and hope for understanding and resolution in the days ahead.
